green beans with garlic & Ginger
- Salt
- 1 pounds green beans, stem end trimmed
- 2 tablespoons vegetable or olive oil
- 2 tablespoons minced fresh ginger
- 2 medium garlic cloves, minced
Bring a large pot of salted water to a boil and fill a large bowl with ice water. Working in batches, boil beans until just tender, about 3 minutes, being careful not to overcook. Remove from boiling water and plunge in ice bath. Drain on towels.
When ready to cook, heat 2 tablespoons of oil in a large skillet or wok over high heat. Add beans, ginger, and garlic, stirring constantly, until beans are heated through and garlic and ginger are softened. Sprinkle with salt and remove to serving dish.
