penne with arugula & Italian sausage

  • 1 pound penne
  • ¾ pounds spicy Italian sausage
  • 5 garlic cloves, minced
  • 3 tablespoons olive oil
  • ½ pound tomatoes, diced
  • 2 cups fresh arugula
  • 1 cup grated parmesan cheese

In a large pot of salted boiling water, cook pasta according to package instructions until al dente. Drain and lightly coat with olive oil. 

Meanwhile, in a large skillet, brown the sausage and garlic in the olive oil, breaking up the sausage into small pieces. Add the tomatoes, stirring until all the liquid has evaporated. Add the drained pasta, parmesan, and arugula. Toss to combine
