ginger & cilantro baked tilapia

  • 2 large tilapia fillets
  • 1 jalapeño pepper, stemmed, seeded, and chopped
  • 3 garlic cloves
  • 1 tablespoon of grated ginger
  • 2 tablespoons soy sauce
  • 1/4 cup white wine
  • 1 teaspoon sesame oil
  • 1/3 cup fresh cilantro, chopped, plus more for garnish
  • 1 scallion, chopped

Preheat the oven to 475°. Add the jalapeño, garlic, ginger, soy sauce, white wine, sesame oil, and cilantro to a food processor or blender. Puree until smooth.

Season the fish fillets with salt and pepper and place in a baking dish just big enough to hold them. Pour the sauce on top.

Place in the oven and cook for 8 to 10 minutes, or until the fish is cooked.

Serve with a garnish of scallion and cilantro.
