Scapes are the flower bud of hard-neck garlic varieties and are removed from the plant to encourage bulb growth. This tasty vegetable has a mild garlic flavor and can be used in place of garlic in any recipe. Get them while you can, scapes are only available for a couple of weeks in June!

Store in a bag in the refrigerator. Scapes can also be frozen whole or cut into pieces – no blanching necessary.
