Often overlooked because of its knobby exterior, celeriac, or celery root, is one of the vegetable world’s hidden gems. Underneath its gnarled skin, the bright white celery root has a sweet and herbaceous celery flavor.

STORAGE TIPS:
Store unpeeled with greens removed in the crisper drawer. Celery root should store for 2-3 weeks.
CULINARY TIPS:
You’ll need a sharp knife to peel one of these. Remove the top and bottom and slide the knife along the side, taking the skin off. Then you can slice and dice according to your recipe.
Thinly slice and eat raw in a salad
Cooked celery root has a texture similar to a potato so it can be roasted, mashed, or prepared like French fries
