Beloved by bunnies and people alike, this sweet and crispy root vegetable is a staple in most kitchens. In addition to being a great source of beta-carotene, carrots also provide more than 100% of the daily value of vitamin A per 100 gram serving.

STORAGE TIPS:
If greens are attached, they should be removed prior to storage. Snap the roots off and store unwashed in your crisper drawer. Carrots should last several weeks.

CULINARY TIPS:

  • Roast with honey or maple syrup to enhance their sweetness

  • Cut into sticks and have as a snack with hummus

  • The greens are edible and can be added to a salad

PAIRS WELL WITH:

  • Butter, coconut oil

  • Dill, parsley, cilantro, mint

  • Scallions, shallots

  • Honey, lemon, vinegar
